From the esteemed cellars of Austria's Weingut Rabl comes this verjus spritz, a true expression of terroir and a sparkling delight for zero alcohol celebration. Made from 73% Zweigelt grapes picked underripe to preserve their intense acidity and freshness, then blended with a dash of local Waldviertler herbs local to the region and a drop of local Alpine spring water, it is a fresh and abundantly delicious wine-like drink.
This beverage expresses so much of what excites us about the potential of non-alcoholic wine-like productions, and who better to execute this than a winery that has operated continuously since 1750 in one of Austria's most celebrated wine growing regions. Verjus, literally the juice of green grapes, is an ideal ingredient for capturing the electric energy that we find in the best cool climate wines, when the grapes have developed a peak of varietal acidity but not yet set themselves towards that pesky sugar content which so yearns to undergo alcoholic fermentation.
A perfect harmony between crisp acidity and softening sweetness, textural astringency and playful florality. This is a triumphant coup de gras and one we are so privileged to have some few tastes of here on the other side of the world. Drink it and think of the Alps. Prost!
