The newest flavour from Heartberry features salal berry, a core plant in so called british columbia's coastal forests. Coast Salish communities use salal as a food ingredient - but this is the first time we have personally seen it used in a sweet beverage.
If you've tried to harvest salal berries before, you know they're a labour of love - they ripen unevenly, so you have to visit the patch or even the same branch multiple times, and when they're ripe, they're super soft and want to crush themselves in your hand. No two berries are alike - some don't taste like much at all. They resist commercialization. And yet, they are worth honouring and a pleasure to drink.
