So, Drinks Farm’s Honey & Sea Salt Seltzer is a concept - a recipe that embraces batch variation as the honey they use changes. This batch was made with honey harvested in summertime by Thurston Honey Beey Co, in Kawartha Lakes, Ontario.

"Drinks Farm is a farm that grows drinks.” Farming and drink production is done entirely by winemaker Drea Scotland, who regeneratively farms 8 acres of land in Prince Edward County, Ontario.

Farming multiple crops is less stressful to the ecosystem, and also creates a diversity of income streams for a small scale farmer. While it’s a solo project, it also creates space for collaboration - buying and selling ingredients from neighbouring businesses and calling attention to seasonailty and nuances of
