About this vinegar
Peach - we couldn’t resist. With their beautiful floral aroma and perfume-y tang, peaches are a perfect candidate for making a complex vinegar.
The fruit for the base wine is probably sourced from the Similkimeen or Okanagan valleys in BC’s interior - the heart of BC’s stonefruit production. With climate crisis and recnet harsh winters all but taking out the stone fruit industry there though it’s certainly not a given that anyone will be able to readily access peaches in the future. Peaches are a sweet summer treat and emblematic of the challenges facing farmers large and small.
In vinegar form, it’s like their beauty and power has been captured in time for us to enjoy in small doses in the future.
Lightly backsweetened, this ‘balsamic’ tastes great lightly diluted with soda water or tonic.
About Salt Spring Island Artisan Vinegar
A labour of love made by a team of 1! These vinegars are made in small batches with locally sourced and in-season fruit.
The fruit listed on the label is fermented into its own wine before undergoing bacterial fermentation to turn into vinegar. (As opposed to the fruit simply being an ingredient that flavours a neutral base vinegar.) Both the initial fermentation and acetic fermentation are processes that take time.
This vinegar is unpasteurized.
