We’ve been singing the praises of Colibri’s sparkling wines for months, and now we are finally pleased to stock their still wines.

This 100% ‘merlot khorus’* offers red fruit notes like raspberry and cherry, with well-integrated fine tannins offering a smooth mouthfeel. Medium bodied and fruity but dry, with a nice hint of tobacco and black pepper on the finish. 

This wine reads as super “dry”, with a nice ‘wine-y’ mouthfeel and drying finish. Can stand up to intense foods like grilled meats, but also can stand alone - a perfect “one glass on the couch after work” wine, or something to offer alongside charcuterie and cheese.

All of Colibri’s wines are estate-grown. The merlot comes from vineyards with alluvial gravel and loamy soil, which affects the grapes’ fruit expression and can add minerality and texture to the final wine.

Fermentation in stainless captures pure fruit notes, 6 months in barrel (we presume neutral) allows the wine to rest. Then, the wine is de-alcoholised to 0.0% using reverse osmosis (aka ‘membrane’ technique) on site at the winery. 

*Merlot Khorus is a relatively new hybrid first created in Italy in 2002. It ripens early and is resistant to mildew and disease, which means it’s great in cooler or more marginal climates. It provides a bit more body and intensity than normal ‘merlot’ and is a little darker in colour. The added intensity probably makes it a good candidate for de-alcoholisation.

ABOUT THE PRODUCER

Located in Friuli-Venezia-Giulia in the North east of Italy, Colibri is an organic estate winery in the heart of the region where prosecco is produced.

'Colibri' is Italian for 'hummingbird', meant to reflect the feeling of freedom and levity that comes with the decision to skip out on alcohol (regardless of whether you're skipping out for an evening or forever).

Their wines are made from grapes grown in their own organic vineyards, and are de-alcoholised gently under vacuum to preserve the aromatics before bottling. Where possible, biodynamic practices (such as green manure) are used, and much of their operations are solar powered. 

Nothing added, only alcohol removed.
