Verjus, derived from the French vert jus, is the unfermented "green juice" of unripe grapes. Early in the season, the grape clusters are thinned (i.e. some are cut from the plant) to ensure the fruit that remains has enough energy to achieve complexity and ripeness. 

Rather than let these unripe fruits go to waste, the juice is pressed, resulting in a fresh, bright and sour grape juice that can be used in place of citrus or vinegar in drinks (or salad dressings, and other culinary uses!) Add a little je ne sais quoi to your drink by adding a splash of verjus.

Refrigerate after opening for up to a month. Freeze in ice tray portions to keep longer.
